Succulent mushrooms cooked with huajillo peppers. Huajillos are mild peppers that are dried, de-seeded, soaked and pulverized to make a paste that is used in many traditional Mexican dishes. The flavour they impart is slightly smoky, fruity and sweet.  They are part of the “Holy Trinity” of peppers used to make mole sauces.
